- 2 medium size russet potatoes, scrubbed and dried
- 1 tbsp olive oil
- 1/2 tsp salt and ground pepper
- 2 tbsp melted butter
- 1/4 cup oat milk
- 1/4 cup Nafsika’s Garden cream cheese vegan style
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp ground pepper
- Pinch of cayenne pepper
- 1/4 cup chopped green onions
- 1 1/2 cups Nafsika’s Garden cheddar vegan cheese style, shreds
Instructions:
- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Wrap each potato in foil and prick a few times with a fork. Brush the potatoes with olive oil, sprinkle with salt and pepper, and rub to coat evenly.
- Bake the potatoes at 400 degrees F for 45-60 minutes or until fork tender, turning once or twice during baking.
- Let the potatoes cool for 5-10 minutes. When cool enough to handle, slice each potato in half lengthwise. Scoop out most of the inside, leaving about 1/4” around the edges and a bit on the bottom to hold their shape.
- Place the potato shells back on the baking sheet and bake for another 10 minutes at 400 degrees F to crisp up.
- Meanwhile, add the scooped-out potato filling to a large bowl with the melted butter, oat milk, cream cheese, and seasonings. Mash until smooth and creamy. Stir in the chopped green onions and 1/2 cup of the cheddar cheese.
- Spoon the mashed potato mixture back into the potato skins, mounding it slightly. Top with the remaining cup of cheese and bake at 400 degrees F for about 15 minutes, or until the cheese is melted and bubbly.
