Gnudi Pasta: A Light and Flavourful Italian Classic

Experience the delicate, pillowy texture of homemade Gnudi Pasta, a lighter alternative to traditional gnocchi. Made with Nafsika’s Garden Ricotta Style vegan cheese, spinach, and a touch of lemon zest, this dish is both elegant and satisfying. Paired with a rich butter pesto sauce, every bite is bursting with flavour. Let’s dive into this simple yet decadent plant-based recipe.
Ingredients:
- 220g Nafsika’s Garden Ricotta style vegan cheese
- 6 ounces spinach
- 1 tbsp flaxseed meal
- 3 tbsp water
- 1/3 cup Nafsika’s Garden Parmesan style vegan cheese, shredded
- 1/4 cup bread crumbs
- 1/2 tsp lemon zest
- 1/3 cup all-purpose flour
- 1/4 cup semolina flour
- 1 tsp sea salt
Butter pesto sauce:
- 4 tbsp salted butter
- 2 tbsp pesto
Instructions:
- To a large heatproof bowl, add the spinach and cover it with boiling water. Submerge the spinach and let it wilt in the hot water for 1-2 minutes. Transfer it to a bowl of ice water.
- Squeeze all the water out of the spinach and transfer it to a cutting board. Chop it up as finely as possible.
- Combine flaxseed meal and water in a small bowl. Let sit for 5 minutes.
- To a large mixing bowl, add ricotta, spinach, flaxseed meal, parmesan cheese, bread crumbs, lemon zest, and salt. Mix until well combined.
- Add the all-purpose flour to the bowl and gently mix until combined.
- To a baking dish, add semolina flour. Use a 3 tbsp cookie scoop to portion the dough into 12 balls. Use your hands to roll the gnudi into the semolina flour.
- Cover the gnudi and let them set in the fridge for a minimum of one hour. They can be left for up to 12 hours.
- Once ready to cook, set a large pot of water over high heat and bring to a rolling boil. Make sure to salt the water.
- Start with a tester gnudi, gently placing it in the boiling water and waiting for it to float to the top, about 3 minutes. After it has begun to float, remove it from the water and set aside.
- Repeat the same process with the rest of the gnudi.
- Set a pan over medium heat, add salted butter and pesto. Allow the butter to melt and mix until smooth. Remove from heat.
- Plate 4-5 gnudi on a plate with spoonfuls of the butter pesto sauce.
