Ingredients:
- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 garlic clove, minced
- 2 1/2 cups fresh spinach or 1 1/2 cups frozen spinach, thawed
- 200g Nafsika’s Garden cream cheese style
- 1/4 cup dairy-free milk, unsweetened
- 1/2 cup Nafsika’s Garden Mozzarella style cheese
- 1/4 cup Nafsika’s Garden Parmesan style cheese
- 14 oz canned artichoke hearts, drained, rinsed, and chopped
- 2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
Directions :
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until it becomes translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant, stirring frequently to prevent the garlic from burning.
- Add the fresh or thawed spinach to the skillet, cooking for 3-5 minutes or until the spinach has wilted and reduced in size, stirring occasionally.
- Reduce the heat to low, then add the cream cheese and dairy-free milk. Stir until the cream cheese has melted and combined with the spinach mixture.
- Gradually add the Nafsika’s Garden Parmesan and Mozzarella style cheeses, stirring constantly until fully melted and incorporated.
- Once the cheese is fully combined, add the chopped artichoke hearts and stir well. If you prefer a thinner consistency, add a little more dairy-free milk. Season the dip with garlic powder, salt, and black pepper, stirring to distribute the seasonings evenly. Taste and adjust the seasoning if needed. Cook for an additional 1-2 minutes, then remove from heat.
- Transfer the dip to an oven-safe dish and sprinkle a bit of extra mozzarella on top. Bake in the preheated oven for 15-20 minutes, until the dip is bubbling around the edges and the cheese on top is lightly browned.
