Ingredients:
- 6 slices white sliced bread
- 220g ricotta style vegan cheese
- 1/4 cup granulated sugar
- 1 lemon, juiced and zested
- 1/2 cup unsweetened oat milk
- 2 tbsp flaxseed meal
- 1 tsp ground cinnamon
- 1 tbsp maple syrup
- 3 tbsp unsalted butter, melted
Topping:
- Maple syrup
- Vegan whipped cream
Instructions:
- In a blender, add ricotta, granulated sugar, lemon juice, and lemon zest. Blend until smooth and set aside.
- To a shallow bowl, add unsweetened oat milk, flaxseed meal, and ground cinnamon. Whisk and let sit for 5 minutes.
- On one slice of white bread, add a heaping tablespoon of ricotta filling and top it with another slice of bread.
