Ingredients:
- 2 cups butternut squash, cubed
- 1 can chickpeas, drained (save liquid for other recipes)
- 4 tbsp olive oil
- Salt and pepper, to taste
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 cup cooked couscous
- 3 cups chopped kale
- 4 ounces Nafsika’s Garden Feta Style Cheese
- 1/4 cup pumpkin seeds
Dressing:
- 2 tbsp apple cider vinegar
- 2 tbsp maple syrup
- 1/2 cup olive oil
- 1 garlic clove, pressed or finely minced
- Salt and pepper, to taste
Directions:
- Preheat your oven to 425°F. Line a baking sheet with parchment paper and set aside.
- Place the butternut squash and chickpeas on the prepared baking sheet. Drizzle with olive oil, then sprinkle with salt, pepper, paprika, garlic powder, and onion powder. Toss until evenly coated.
- Roast the squash and chickpeas in the oven for 15 minutes. Flip them, then roast for another 10-15 minutes, or until golden and caramelized. Remove from the oven and let cool for 10-15 minutes.
- While roasting, prepare the dressing by whisking together apple cider vinegar, maple syrup, olive oil, garlic, salt, and pepper. Set aside.
- Cook couscous according to package instructions. Toss with 1-2 tablespoons of dressing and let cool.
- Massage kale with 1-2 tablespoons of dressing until tender. Let it sit while preparing the rest of the salad.
- To assemble, layer couscous at the bottom of a serving bowl. Add massaged kale, followed by roasted butternut squash and chickpeas. Sprinkle with pumpkin seeds and crumble the feta-style cheese on top. Drizzle remaining dressing and toss gently.
