Edamame Salad
Ingredients:
- 500g frozen edamame, shelled
- 1 lemon, zested and juiced
- 1/3 cup Nafsika’s Garden shredded Parmesan style cheese
- 2 tbsp basil, chopped
- Salt and pepper, to taste
Directions:
- Cook edamame beans according to package instructions.
- In a medium-sized bowl, add edamame, basil, lemon zest, lemon juice, salt, pepper, and mix. Sprinkle parmesan cheese and toss together until evenly coated.
- Enjoy as is or with some toasted baguette.
