Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 1/2 red onion, chopped
  • 4 garlic cloves, minced or pressed
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons organic all-purpose flour
  • 4 cups organic vegetable stock or broth
  • 1 cup non-dairy cream (or coconut cream)
  • 3 tablespoons white cooking wine
  • 8-9 lasagna noodles, broken into small pieces
  • 1 1/2 cups Nafsika’s Garden White Cheddar Style Cheese, grated
  • 3/4 cup Nafsika’s Garden Parmesan Style Cheese
  • 2 cups chopped kale or spinach

Directions:

  1. In a medium-sized pot over medium-high heat, warm the olive oil. Add the chopped red onion and minced garlic, sautéing for 1-2 minutes until the onion is translucent and the garlic is fragrant.
  2. Sprinkle in the smoked paprika, garlic powder, onion powder, sea salt, and black pepper. Stir until evenly combined.
  3. Gradually sprinkle in the flour, stirring constantly to form a smooth paste. Cook for 1 minute, then slowly whisk in the vegetable stock and white cooking wine. Stir frequently to avoid lumps as the mixture thickens, about 5-10 minutes.
  4. Once the soup base has thickened, stir in the non-dairy cream, followed by the chopped kale or spinach and broken lasagna noodles. Reduce the heat slightly and let the soup simmer for 15-20 minutes, or until the noodles are tender and fully cooked.
  5. Add the grated Nafsika’s Garden White Cheddar Style Cheese and Parmesan Style Cheese, stirring until melted into a creamy texture. Allow the soup to simmer for an additional 1-2 minutes.
  6. Serve immediately, topping each bowl with extra Parmesan Style Cheese if desired.
