Ingredients:
Tomato Salad:
- 1 head of romaine lettuce, chopped
- 2/3 cup of cherry tomatoes, quartered
- 1/4 cup white onion, diced
- 1 lime, juiced
- 1/4 cup cilantro, chopped
Chili Yogurt Sauce:
- 1/2 cup Vegan plain yogurt
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Toppings:
- 1/2 cup vegan ground beef or protein of choice
- Half an avocado, sliced or mashed
- 1/4 cup corn
- 1/4 cup Nafsika’s Garden Tex Mex style shredded cheese
- 1/4 cup pickled red onions
Directions:
- In a small bowl, add cherry tomatoes, white onion, cilantro, half the lime juice, and salt. Toss together and set aside.
- To make the sauce, combine vegan plain yogurt, chili powder, onion powder, garlic powder, and salt. Whisk until fully combined and set aside.
- Place chopped lettuce at the bottom of a medium bowl. You can also add a cup or so of rice to make this even more filling. Top lettuce with vegan ground beef, tomato mixture, corn, pickled red onions, mashed avocado, and drizzle yogurt chili dressing on top.
- Mix and enjoy!
