Mini Vegan Banana Bread Loafs
These mini vegan banana bread loaves are the perfect dessert! Now you can try them too. Best when warmed up!
Ingredients
- 2 ripe bananas
- 1/4 cup dairy-free yogurt (I used cashew)
- 1 flax egg (1 tablespoon ground flax + 3 tablespoons warm water)
- 1/3 cup liquid coconut oil
- 2 tablespoons maple syrup
- 1/3 cup creamy nut or seed butter
- 1/2 cup non-dairy milk
- 1 teaspoon vanilla extract
- 1.5 cups oat flour (made from Rolled Oats or use spelt flour)
- 1/2 cup Rolled Oats
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/3 cup dark chocolate chips or chunks
Method
- Preheat oven to 350 degrees and grease a mini loaf pan with coconut oil
- Mash the bananas in a large bowl then add yogurt, flax egg, coconut oil, maple syrup, vanilla extract, nut butter and milk and mix until creamy
- Add in the oat flour, oats, baking powder and cinnamon and mix well
- Fold in dark chocolate then add to each loaf pan and bake in oven for about 12-15 minutes or until ready
