Caramelized Onion Grilled Cheese: A Rich and Savoury Delight

Ingredients:
- 2 yellow onions, sliced 1/2 inch thick
- 4 tbsp salted vegan butter
- 2 cloves garlic, crushed
- 1 tsp fresh thyme leaves
- 3/4 tsp sea salt
- 1/2 tsp ground black pepper
- 3 tbsp dry white wine (can substitute with vegetable stock)
- 4 slices bread of choice
- Nafsika’s Garden Marble vegan style cheese slices
- 100g Nafsika’s Garden Smoked Gouda vegan style block cheese, shredded
- 4 tbsp vegan butter
Instructions:
- In a large heavy-bottom skillet or cast-iron pan, heat the butter over medium heat. Add the sliced onions, crushed garlic, fresh thyme, black pepper, and salt. Sauté for 5 minutes, stirring to coat the onions in butter. Reduce the heat to medium-low and continue sautéing for 20 minutes, stirring occasionally. Add the white wine (if using) and let the liquid cook off. Remove from heat and set aside.
- Preheat the oven to 350 degrees F.
- Butter all sides of the four slices of bread. On two pieces of bread, place a slice of Marble cheese and top with as much caramelized onion as desired. On theremaining two slices, layer the shredded Smoked Gouda. Press the slices together to form two sandwiches.
- In a medium skillet over medium heat, toast the sandwiches until perfectly golden brown on each side and the cheese begins to melt. Carefully flip to ensure even crisping.
- Transfer the skillet to the preheated oven and allow the cheese to fully melt. Once the cheese is gooey and melted, remove from the oven.
