Do you miss Mayo? Can I show you something way better? It’s a vegan mayo made of Avocado! A friend made this for me the other day and I fell in love. The recipe is taken from a chef from Greece…written in Greek but don’t worry, I’ve translated it for you here. 🙂  I really recommend you try it!

The only change I made, and that I always make, is switched the seed oil to extra virgin olive oil (EVOO)…

Ingredients

  • 3 ripe avocados cut into quarters
  • 1 tbsp dry onion, chopped
  • 1 tbsp soft mustard
  • 1 tsp vinegar
  • juice from 1 medium lemon
  • salt to taste
  • pepper to taste
  • 2 tablespoons of olive oil (EVOO)

Directions

  1. Blend all of the ingredients in a blender
  2. Add in the oil last and continue blending.
  3. This velvety green vegan mayonnaise is ready to eat!

Blend all ingredients in a blender, except oil, until creamy. Add oil last and continue blending.

This velvety green vegan mayonnaise is ready to enjoy! Enjoy it as regular mayonnaise, on salads, sandwiches, seafood, and anything else you like. Store in an airtight glass jar in the refrigerator for up to a week. You can also freeze it. Honestly, I didn't even know I liked avocado until I tried this recipe.
