Ingredients:
- 2 balls of store-bought dough or homemade
- 1/4 cup vegan unsalted butter, room temperature
- 1 tbsp finely chopped fresh rosemary
- 1 tbsp finely chopped fresh parsley (or 2 tsp dried)
- 1 tbsp scallion, chopped
- 2 garlic cloves, minced
- 1/4 cup Nafsika’s Garden shredded parmesan style cheese
- 1/4 tsp salt
Directions:
- In a medium bowl, mix together the softened butter, rosemary, parsley, scallion, garlic, parmesan, and salt until fully combined. You can use a spoon or an electric mixer for this step.
- Divide the dough in half and set one half aside. On a lightly floured surface, roll out one half of the dough into an 8x10 inch rectangle. Spread half of the herbed filling evenly over the dough.
- Using a pizza cutter, cut the dough into 12 squares. Stack the squares on top of each other, then place the stack into a loaf tin. Repeat these steps with the other half of the dough.
- Cover the loaf tin with a clean dish towel and allow the dough to rise in a warm, draft-free environment until puffy, about 45 minutes.
- Preheat your oven to 350°F (175°C).
- Place the loaf on the lower rack of the oven and bake until golden brown, about 40 minutes. If you notice the top of the bread browning too quickly, cover it with aluminum foil. Don’t worry if melted butter gathers around the sides; it will soak back into the bread, making it extra flavourful.
- Remove the loaf from the oven and set the pan on a wire rack. Allow it to cool in the pan for 5-10 minutes, then remove from the pan and let sit for an additional 5 minutes.
