Vegan Quinoa Stuffed Peppers! 🌶

Eating a healthy plant-based meal doesn’t have to be hard. Here are fun and colorful Quinoa Stuffed Peppers! Easy quinoa with black beans and corn is stuffed into these pretty pepper packages for an awesome healthy meal!

Ingredients
- 4 large bell peppers
- 3/4 cup dry quinoa
- 15 oz. can black beans
- 1 cup corn (I use frozen, thawed)
- 2 green onions
- 2/3 cup salsa
- 2 Tbsp. nutritional yeast
- 1 1/2 tsp. cumin
- 1 tsp. smoked paprika
- 1 tsp. chili powder
Optional additions: chipotle, tomatoes, cilantro, green chiles, garlic powder, hemp hearts
Toppings of choice: guacamole (yum!), salsa, hot sauce, etc.
Directions
- Preheat the oven to 400 degrees F.
- Cut the tops off of your peppers and remove the seeds. Place them in a baking dish.
- Rinse the quinoa thoroughly, then cook according to the package directions. (About 15 minutes.)
- While the quinoa is cooking, drain and rinse the black beans, then place them in a large bowl. Add the corn, green onions, salsa, nutritional yeast, cumin, smoked paprika, and chili powder. Stir until combined.
- Once the quinoa is finished cooking, fluff it with a fork and stir it into the bean mixture. Stir to combine.
- Stuff the pepper halves with the quinoa mixture, packing it in tightly. Bake the peppers for 25-30 minutes, or until tender.
- Serve with your favorite toppings and enjoy!
